
This crispy deep-fried Lady’s finger is my family favorite. I tasted it for the first time at my home when my sis made it. This is her recipe. She usually deep fry the okra fully so I too follow the same. You can also cut them into pieces and marinate with the same spices and fry them. This fry goes well with Rice, any curry or kuzhambu and also with variety rice.

Spicy Lady’s finger stir fry/Vendakkai Poriyal

Serves : 3
INGREDIENTS REQUIRED
Lady’s finger – 250g
Kashmiri Red chilli powder – 1/2 tbsp
Red chilli powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Pepper powder – 1 tsp
Coriander powder – 1 tsp
Cumin Powder – 1/2 tsp
Corn flour – 2 tbsp
Rice flour – 1 tbsp
Salt to taste
Oil for frying
METHOD
1.Wash Lady’s finger well in water. Then pat dry them with a towel or tissue. Then trim both the ends, make 4 slits in it but the Lady’s finger should be intact. Marinate the Lady’s finger with Kashmiri chilli powder, red chilli powder, Turmeric powder, pepper powder, Coriander powder, Cumin powder, cornflour, rice flour and salt. Add a few drops of oil, sprinkle little water and mix well. Allow it to marinate for 10 minutes.

2. Heat oil for frying in a pan. Place the flame in medium. When the oil is hot. Drop the marinated Lady’s finger in the oil. Fry them to a golden crisp. Then remove from the oil.

Serve with Rice and curry or Variety Rice.
