Red Pumpkin Halwa – Sigappu Poosanikai Halwa

Today I made this Red pumpkin halwa at Lunch. It is so simple to cook and tastes delicious. For a change from the usual recipes, I cook with Pumpkin. I decided to make a sweet with it.

Serves: 2

INGREDIENTS REQUIRED

Grated Red pumpkin – 3 cups

Ghee – 3 tbsp

Cashews – 10 nos

Brown sugar – 3/4 cup

Milk – 1 cup

Cardamom powder – 1/2 tsp

METHOD

1.Peel the skin of the pumpkin. Cut them into pieces. Remove the seeds. Wash the pumpkin pieces well in water. Then grate them.

2. Heat about 2 tbsp of ghee in a pan. Add the cashews to it. Fry them to golden then remove them from the ghee.

3. Add more ghee if required then add the grated pumpkin into it. Saute them well in the ghee in low flame until the raw smell leaves. Once the pumpkin is sauteed well add the sugar into it. I used brown sugar. You can also use white sugar instead. Adjust the sweetness to your taste. The sugar will start to melt. Then add milk, cardamom powder and mix well. The milk will begin to boil and the pumpkin will get soft also the milk will begin to reduce. Now keep on stirring it so that it doesn’t get burnt down. Stir it well until the ghee begins to appear and the dish becomes non-sticky to the pan. Add a tbsp of ghee to it. Mix well. Add the fried cashews to it and switch off the flame.

Serve hot or chilled.
