Palkova

I still remember days when my dad purchases Palkova from aavin shop near the bus stand while dropping my mom to her school. That is my sis favorite. I too like it a lot but not as my sis. Still, now it’s her favorite and now it’s my daughter’s turn. She loves it as my sis does. She asks them to send it for her whenever it is possible. I learnt to make this palkova from my mom. Mostly she makes it with the milk that is curdled as we used to make Kalakand. Because only when the milk curdled or when there is a large quantity of milk at the fridge and it is about to expire we had the chance to make and have it.

I used to make Palkova for my daughter occasionally. She was keeping on asking for it this week and also there was a bottle of milk which was nearing the expiry date. Its time taking but worth doing it.

Cooking Time : 1 hr

Serves: 2 -3

INGREDIENTS REQUIRED

Full Fat Milk – 1 litre

Sugar – 1/4 cup

Ghee as required

Cardamom powder – 1/4 tsp

METHOD

1.Take milk in a heavy-bottomed pot. Allow it to boil in medium flame. It will take around 10 mins to boil. When it has started boiling, start scrapping off the edges with a wooden ladle. Place the ladle in it to avoid spilling off of the milk. After 30 minutes the milk will be reduced and will start to get thick. Keep on stirring it else it may get burnt.

2. To the milk add sugar and mix it well. I used brown sugar. You can also use white sugar. After a few minutes, the sugar will dissolve completely, then add cardamom powder to it and mix well. Keep on stirring it. After 5 minutes start adding ghee little by little and keep on stirring it till you get the required consistency of palkova.

Palkova is ready to be served.
