
I love the combo of mutton and potato a lot. So aloo gosht is always our favourite and a frequent mutton combo prepared at home as potatoes are always available at my home. Mixing the rice with the gravy and potato, having a bite. I always relish this taste. Mostly I cook mutton in a pressure cooker, this time I want to try it in a pan, cooking it in dum and the mutton cooked well and the gravy tasted so well. It was time-consuming but worthful.

Serves : 3-4
INGREDIENTS REQUIRED
Oil for frying
Onions – 3(medium sized, thinly sliced)
Cumin seeds – 1/2 tsp
Peppercorns – 1/2 tsp
Cardamom – 3
Cloves – 4
Cinnamon – 2 ( 1.5 inch piece)
Mutton with bones – 400g
Ginger garlic paste – 1 tbsp
Turmeric powder – 1/2 tsp
Red chilli powder – 3 tsp(adjust to your taste)
Coriander powder – 2.5 tsp
Salt to taste
Tomato – 1 ( medium sized, chopped)
Curd – 2.5 tbsp
Potato – 2(cut into big pieces)
Green chillies – 4(adjust to your taste)
Garam masala – 1/2 to 1 tsp
Coriander leaves – 1/4 cup(chopped)
METHOD
1.Heat oil in a pan. Add thinly sliced onions and fry them to a golden crisp. Remove them from the oil and transfer them to a plate.

2.In the same pan, To the remaining oil, add cumin seeds, peppercorns, cinnamon, cloves.Then add the cleaned mutton pieces and saute them well in the oil until the color of it changes.Add ginger garlic paste to it.saute until the raw smell leaves.

3. Add turmeric powder, red chilli powder, coriander powder. Mix the powder well with the mutton. Add salt to taste, crush the fried onions and add them. Mix well. Add 3 cups of hot water and allow the mutton to cook. It took around 45 to 50 minutes in medium flame for the mutton to get tender. Add hot water as required and cook until the mutton is cooked.

4.When the mutton is tender and the gravy has reduced, add the chopped tomatoes. Saute until the tomatoes get mushy. Then add curd into it. Mix well. Then add the potato pieces, green chillies, garam masala and stir it. Then add 2 cups of hot water, cover and cook until the potatoes are cooked.

5. When the potatoes are cooked, switch off the flame. Finally, add some chopped coriander leaves.

Serve hot with Rice, roti,chapathi or naan.
