
Carrot dal – an easy recipe you can serve along with rice, chapati or roti This is our recent favourite dal recipe. Whatever dal recipe you make serve it hot. It will be so tasty when served with Rice, just a pickle or a veggie fry will make the meal so special. You can also add ghee to the dal and have it.

INGREDIENTS REQUIRED
Oil – 2 tbsp
mustard seeds – 1/2 tsp
Cumin seeds – 1 tsp
Shallots – 10(sliced)
Garlic cloves – 10(small pods)
Red chilli (dried) – 3(broken into pieces)
Green chillies – 2 ( cut into halves)
Curry leaves – 1 sprig
Carrot – 2 ( cut into pieces)
Salt to taste
Asafoetida – a pinch
Toor dal – 1/2 cup
Water – 1/2 cup
Coriander leaves – a few(chopped)
METHOD
1.Wash and Soak toor dal in water for about 15 to 20 mins.This will help the dal to cook fast.Add it to a pressure cooker along with 3/4 cup of water and pressure cook for 2 whistles.The dal should get soft and mushy.

2. In a pot, heat oil.Add mustard seeds. let it splutter.Then add cumin seeds, shallots, garlic , dried red chillies, green chillies, curry leaves and asafoetida.Saute them well in oil until the shallots turn light golden.

3. Add the carrot pieces, salt to taste and turmeric powder.Saute the carrots and allow it to cook .when the carrots are cooked ,add the cooked dal and 1/2 cup of water and mix well.Allow it to boil for 5 minutes in medium flame.Finally add the chopped coriander leaves.

Serve hot with Rice or roti.
