Sev Recipe – Besan Sev for Chaat – Crispy Sev Namkeen

Fridays have become snacks making days as my husband would be at home and he will help me with it. I wish to have some snacks to munch on in-between for no reason and also with our tea or coffee. The snacks from shops are not up to my liking and also quite costly. So I opt to prepare the snacks at my home itself. The sweet snacks which I prepare during the weekend will not survive for more than 2 days However, the spicy ones will go for a long run. Last 2 weeks I tried pottukadalai murukku the taste was so good but the murukku ended as Karasev. I don’t know where I am going wrong. Once it turns out perfect I will make a post on it. Another snack which I am good at making is sev or besan sev. I was planning to make it for a long time so that I can use it while making chaat. I used 2 cups of gram flour for making the sev. One portion of the sev I used for making the mixture recipe and has stored the other portion in an airtight container so that I can use it while making chaat. The mixture too came out so well. Next time I will post the recipe of that too.

Preparation Time : 10 mins

Cooking Time : 20 mins

INGREDIENTS REQUIRED

Gram flour – 2 cups

Rice flour – 2 tbsp

Salt – 1 tsp

Oil for frying

METHOD

1.Take gram flour, rice flour, turmeric powder, salt in a mixing bowl. Add a tbsp of hot oil to it and mix well with the hands. Then slowly add water into it and knead it into a soft dough.

2. Heat oil in a Kadai or pan. Use the small holes mould for this. Grease the inside of the chakli maker with oil. Place the dough into it and press the dough directly into the oil. Fry the sev in medium flame and then flip it to the other side. It will take only 1 or 2 minutes to cook.

3. Remove the sev into a plate or tray lined with a kitchen towel. Similarly, fry the remaining dough. Break the fried sev into small pieces with hands. Also, fry some curry leaves in the oil and add it to the sev.

Serve with Tea or Coffee .
