
Bitter gourd is cooked along with onion, tomato and tamarind. This dish has a combined taste in it. This thokku goes well with rice. You can also serve it with rice and dal. Today I made my lunch so simple. I made rice, pagarkai thokku and omelette. I love bitter gourd so is my family they too love it. Any dish made out of it the vessel turns to be empty as we love it despite its bitter taste.

INGREDIENTS REQUIRED
Gingelly oil – 4 tbsp
Mustard seeds – 1/2 tsp
Fenugreek seeds – a pinch
onion – 2 cup (chopped)
Asafoetida – 1/8 tsp
Garlic – 12 pods
Tomato – 1 (chopped)
Curry leaves – 2 sprigs
Bitter gourd – 2 cups (chopped)
Salt to taste
Turmeric powder – 1/2 tsp
Red chilli powder – 1.5 tsp
coriander powder – 1 tsp
Tamarind – a lemon size
jaggery – a small piece
METHOD
1.Soak tamarind in 1 cup of hot water for 15 minutes.Then extract the juice.

2.Heat oil in a pot or pan.when the oil is hot, add mustard seeds, fenugreek seeds.Let them crackle.Then add chopped onions, little salt and saute till the onions turn golden.Then add garlic, chopped tomatoes, curry leaves.Saute well until the oil separates.

3. Add the chopped bitter gourd, turmeric powder, red chilli powder, coriander powder.Mix well, cover and cook in medium flame for 5 to 6 minutes.Stir in between.

4. Add the tamarind extract. Mix well. Check for salt and add if required. Add jaggery. Cover and cook in low flame for 10 minutes and stir in between until the oil begins to appear on the top. Then switch off the flame.

Pagarkai thokku is ready.
Serve with Rice.
