
Aviyal is mostly prepared with a large variety of veggies. Sometimes it is also prepared with particular veggies like brinjal,kovakkai, potato and also sometimes with non-vegetarian like fishes and egg. My mom usually makes potato aviyal at home. This aviyal is made with kovakkai/Tindora as the main ingredient. It is so simple to cook and tasty too.

INGREDIENTS REQUIRED
kovakkai/Tindora – 300g
Turmeric powder – 1/2 tsp
Salt to taste
Thick Yoghurt – 5 tbsp
Shallots – 5
curry leaves – a few
green chillies – 3
cumin seeds – 1 tsp
grated coconut – 1 cup
coconut oil – 1 or 2 tbsp
METHOD
1.Crush curry leaves, green chillies, shallots, grated coconut, cumin seeds in a blender.

2. Wash the tindora well in water.Trim both the ends and cut into four pieces lengthwise.Add them to a pot.To it add turmeric powder, salt and little water.Mix well.Switch on the flame , cover and cook until the tindora gets cooked.It should be crunchy and cooked not mushy.

3. After the tindora is cooked, add the crushed ingredients into it and mix well. Cover and cook in low flame for 5 minutes and stir in between. Then add yoghurt and mix well. when it starts to bubble out, switch off the flame. Add curry leaves and coconut oil. Mix well.

Serve with Rice and Sambar or moru curry or Rasam.
