Kudal Varuval – Spicy Mutton Boti Roast

It is always difficult to find Boti /Kudal dish in the restaurant. I believe the main reason for it is due to the difficulty involved in the cleaning process. Cleaning it is a difficult task for me so I cook it once in a while. Whenever I go on vacation my parents would never miss to cook and give me boti. This is also my mom’s recipe. I have already posted my mom’s boti chana dal curry. Try them too.

Serves : 3

INGREDIENTS REQUIRED

kudal/boti – 4 cups

Oil – 3 tbsp

Cinnamon – 2 inch piece

Cardamom – 3

Cloves – 3

Onion – 3(medium ssize, sliced)

Curry leaves – a few

Ginger garlic paste – 1 tbsp

turmeric powder -1/2 tsp

red chilli powder – 2 tsp

coriander powder -1/2 tsp

garam masala – 1/2 tsp

Salt to taste

Pepper powder – 1 tsp

Coriander leaves – a few

METHOD

1.Clean the boti and wash well with hot water. Drain the water completely and add the cleaned boti into a pressure cooker along with turmeric powder and salt. Pressure cook for 5 to 6 whistles.

2.Heat oil in a pan, add cinnamon, cardamom, cloves. Let it splutter. Then add sliced onions, curry leaves, a little salt. Saute the onions until it turns golden, add ginger garlic paste and saute till the raw smell leaves. Add red chilli powder, coriander powder,garam masala powder and mix well. Add the cooked boti to it along with little water and mix well. Cook until the water is reduced and the masala is nicely coated in the boti. Finally, add pepper powder and chopped coriander leaves and give a mix. Then switch off the flame.

Boti roast is ready.

Serve with rice, roti or chapathi.
