Kathrikai kadaiyal – a curry made with mashed brinjal and tomatoes. Tomatoes and tamarind are added to give sourness to the dish. At our home, we usually make this as a side dish for rice, when making mutton curry, chicken curry or egg curry. These are the best combination for this dish.
Lets see how to cook it.

In a pot or pan add the chopped brinjals, tomatoes and break the green chillies into 2 and add it to the pot. Add water into it. Place the pot on stove and switch on the flame. Allow it to cook until the veggies get mashed well.
Once they are done, add the tamarind extract as required as we have added tomato already. Add some salt.
