
Chettinad mutton curry is prepared with freshly ground spices and coconut. Mutton biryani is my favourite recipe with mutton, but at times I prefer to have mutton curry with Rice or pulao especially ghee rice( nei choru ). At home, On Sundays, mostly lunch will be mutton curry and rice, the leftover curry will be paired with Dosa or Idiyappam at night.
Usually, I follow my mom’s mutton curry recipe at times I try something different for a change, one such recipe is this Chettinad mutton curry. The freshly roasted ingredients give a nice taste and aroma to the dish.

Serves – 3 to 4
INGREDIENTS REQUIRED
For Dry roasting and Grinding
Coriander seeds – 1 tbsp
Cumin seeds – 1 tsp
Fennel seeds – 1 tsp
Peppercorns – 1 tsp
Cinnamon – a small piece
Cardamom – 1
Cloves – 2
Star anise – 1/2
Dried Red chillies – 6
Grated coconut – 4 tbsp
Poppy seeds – 2 tsp
For Curry
Groundnut oil – 2 to 3 tbsp
Fennel seeds – 1/4 tsp
Cinnamon – a small piece
Cardamom – 2
Cloves – 2
Bay leaves – 1
shallots – 25(sliced)
Curry leaves – a few
Ginger garlic paste – 1 tbsp
tomato – 1 ( medium sized ,chopped)
Turmeric powder – 1/2 tsp
Mutton – 350 g
Coriander leaves – a few
METHOD
1. Dry roast coriander seeds, cumin seeds, fennel seeds, peppercorns, cinnamon, cardamom, cloves, star anise, dried red chillies in low flame until a nice aroma comes out. Then add grated coconut. Roast it to light golden. Then switch off the flame and add poppy seeds if using it and roast it. Allow it to cool down then transfer it into a blender and grind it into a smooth paste.

2. Heat oil in a pressure cooker, when its hot add fennel seeds, cinnamon, cardamom, cloves, bay leaves. Let them splutter. Then add the sliced shallots. Saute it to light golden. Then add curry leaves, ginger garlic paste. Saute until the raw smell leaves. Add chopped tomatoes. Saute until the tomatoes turn mushy. Add turmeric powder, ground paste,1/2 cup of water and mix well. cook in medium flame and stir in between until the oil begins to appear.

3. Add cleaned mutton pieces into it and mix well,add 1/2 cup of water,salt as required and pressure cook until the mutton gets tender. Finally add chopped coriander leaves into it.

Chettinad mutton curry is ready.
Serve with Rice,Idli , dosa , appam or Idiyappam.
