Raw mango curry – Raw mango coconut milk curry

A simple curry with raw mango that goes well with Rice. It is a Kerala style curry. I got this recipe from a Malayalam cookery show on tv years back and have noted it down in my recipe book. It was so easy to cook. I love many recipes made with raw mango-like raw mango Rasam, mango pickle, raw mango dal, fish curry with raw mango, prawn mango curry… The ingredients for this recipe is quite simple. Today I cooked it for lunch along with Rice and spicy beetroot stir fry.

Serves : 3

INGREDIENTS REQUIRED

For curry

Shallots – 20 (sliced)

Ginger – 1tbsp (chopped)

Green chillies – 3(sliced)

Curry leaves – 2 sprigs

Salt to taste

Coconut oil – 1 tbsp

Turmeric powder – 1/2 tsp

Red chilli powder – 1 tsp

Coriander powder – 2 tsp

Raw mango – 1(sliced into thick pieces)

Thin ccoconut milk – 1 and 1/2 cups

Thick coconut milk – 1/2 cup

For Tempering

Coconut oil – 1.5 tbsp

Mustard sseeds – 1/2 tsp

Fenugreek seeds – a pinch

Shallots – 6 (sliced)

Dried Red chillies – 2 (broken into pieces)

Curry leaves – a sprig

METHOD

1.In a pot, take sliced shallots, chopped ginger, sliced green chillies, curry leaves, salt to taste and coconut oil. Mix well with hand. Add Turmeric powder, red chilli powder and coriander powder to it and mix it well with hand.

2. Add raw mangoes into it. Mix well. Add the thin coconut milk into it. Place the pot on medium flame. Allow it to boil until the mangoes get soft, and the curry is reduced. Add the thick coconut milk and allow it to cook for a minute. Then switch off the flame. Prepare the tempering with the ingredients given in for Tempering and add the tempering to the curry.

Raw mango curry is ready.

Serve hot with Rice.
