King Fish masala – Vanjaram masala – Fish masala

A masala prepared with kingfish. you can also use any fleshy fish with fewer bones. Fish masala is a great combo with Rice and rasam or any dal varieties. This recipe will be different from the fish curry or fish fry which is usually made. First, we fry the fish and cook them in onion, tomato masala. At first, I planned to cook fish Polichathu, I also bought banana leaves for it. But finally ended up with masala as I was so hungry and couldn’t wait to eat. I Will try to make polichathu in the coming weeks .

INGREDIENTS REQUIRED

For Marination

Kingfish – 500 kg

Ginger garlic paste – 1/2 tbsp

Salt

turmeric powder -1/4 tsp

Kashmiri red chilli powder – 2 tsp

pepper powder – 1 tsp

garam masala powder – 1/2 tsp

Coconut oil – 2 tsp

Lemon – 1/2

Oil for frying

For Masala

Onion – 2(medium-sized, chopped)

Ginger garlic paste – 1 tbsp

Tomato – 1(big size)

fennel powder – 1/2 tsp

Pepper powder – 1/2 tsp

Kashmiri chilli powder – 1.5 tsp

Coriander powder – 1/2 tsp

Garam masala powder – 1/2 tsp

Green chillies – 2 (sliced)

curry leaves – 2 sprigs

coriander leaves – a few

salt

METHOD

1.Clean and wash well the fish pieces. Take red chilli powder, turmeric powder, salt, pepper powder, garam masala powder, ginger-garlic paste on a plate or bowl. To it add 2 tsp of oil and squeeze a lemon into it. Now mix all the ingredients well and marinate the fish pieces with it. Allow it to marinate overnight or at least 30 minutes. Heat oil in a pan for shallow frying and when the oil is hot, add the marinated fish pieces and fry them on both sides to golden. Once they are done remove them from the pan.

2. To the same pan, add some oil if required. Add the chopped onions to it. Saute them in the oil, then add ginger garlic paste. saute until the raw smell of it leaves. Add chopped tomatoes, curry leaves, green chillies and saute it. Allow the tomatoes and onions to get mushy by sauteeing them. Place in low flame and add red chilli powder, pepper powder, fennel powder, garam masala powder, coriander powder and salt as required. Saute for a minute. Add water and cook so that the onions and tomatoes get mashed out well and oil begins to appear top and the water is reduced. Finally, add the fry fish pieces and coat them with masala. garnish with coriander leaves and switch off the flame.

Serve hot with Rice.
